Wow, another week has gone by! Here’s another one of Zeynep’s Sunday recipes to keep you healthy and energized during quarantine. Let's give you something to feel good about!
This gluten free red lentil bread recipe is easy to make and delicious! All you need is a blender, red lentils and some kitchen essentials! You can enjoy them with soup, hummus and vegetables.

🕐 Time
20-25 minutes bake time, 1 hour cool time
🥣 Equipment
Blender
Loaf pan
Parchment paper
🍴 Ingredients
Red lentils - 1 cup (presoaked in water and drained)
Yogurt -½ cup
Olive oil -¼ cup
Baking powder - 1 tsp
Baking soda - 1 tsp
Eggs - 2
Toppings:
Cheddar cheese
Sesame seeds or any seeds (sunflower, pumpkin)
Optional toppings:
Fresh dill ¼ bunch
Parsley, rosemary, basil or whatever you like
👇Steps
1. Preheat oven to 375.
2. Lay parchment paper in a loaf pan.
3. Blend your lentils
4. Add yogurt and blend
5. Add olive oil and blend
6. Add eggs and blend
7. Add baking powder and baking soda and blend.
It should be mixed until it’s homogeneous
8. Pour the mixture into the loaf pan
9. Sprinkle cheddar cheese on top.
Push it into the mixture a little bit, so that it doesn’t burn easily.
10. Sprinkle any other seeds or herbs you have on top, and then put it in the oven.
After it’s finished baking let it cool! If you cut it right away, it’ll fall apart and there is enough falling apart in this world already. Let’s keep it together, and give it some time. If you’re feeling anxious waiting, practice some mindful breathing or go for a walk without your phone.
